Evelyn and New Tricks!

I cannot believe that our little baby girl will be 10 months in a couple of weeks! She is growing and learning so fast I just can’t stand it. Okay folks I have to tell you what little Evelyn has been up to the last four days.

Friday- we were sitting and skyping with our dear friends Sammy and Veronica Lange from Austria and we were ending the conversation and saying good bye. Sammy and Veronica were waving and Evelyn put her little hand up and waved for the first time… She now consistently waves and says bye bye all the time. Tonight Aaron couldn’t even leave without her going up to the door and waving and saying bye bye… Too cute!

Saturday- Grandma Mia came into town (yay!) and spent a few days with us. Let me tell you, leave it up to grandmas to start the tricks rolling. Saturday night we were having dinner at the Fisk’s house (they graciously hosted a ton of my family last minute at their house) and Evelyn just started clapping for the first time (which she does all the time now). Poor little Landon was clapping too and didn’t understand why she was getting the attention for clapping and not him, so we cheered for him too 🙂

Sunday- Evelyn started doing the Indian noise with her mouth (I hope y’all know what I mean). She also started giving high fives (when she feels like it) and attempting to blow kisses and give kisses.

Monday- Evelyn started standing (while not holding on to anything) for more than 5 seconds and she even took a step once or twice! This is just too much stuff in four days! Everyday I can’t describe the love I have for this little sweet heart. Her smiles and laughter just make me more attached and blessed to be her mommy. Treasure your little ones and the moments you have with them. One minute they are tiny and asleep in your arms and the next minute they are laughing and taking steps.

Well I just had to share and here is a picture to go with all the milestones 🙂 I am sure I will be posting again soon when she starts driving or something like that.

Etsy Happenings

Okay so I have been getting some Etsy inventory done a little at a time. Realistically I am hoping to have the shop up in November… Before Thanksgiving (just in time for Christmas shopping!). I have several necklaces in the making and am currently working on some branding ideas and sorting out all of my pricing/ finances. Things are going well and I am getting excited about getting things going. I have posted a picture below to get some continued feedback before the shop goes live. Right now I am just working on casual necklaces but I hope to add rings, bracelets and different types of necklaces (custom, necklaces with grandkid’s names, fancier necklaces and so on) in the future. Hope you are all having a fab day and I will let you know how things progress. 🙂

Thought for the day

“My hope lives not because I am not a sinner, but because I am a sinner for who Christ died; my trust is not that I am holy, but that being unholy, he is my righteousness. My faith rests not upon what I am, or shall be, or feel, or know, but in what Christ is, what he has done, and what he is now doing for me.” – Charles Spurgeon

This quote hit me very hard this morning. I realized that my faith is mostly built on what I think I am, what I think I am going to be, how I feel at the moment and what I think I know. I would like to believe that I am not run by my feelings, but I am. Everyday I am faced with a choice of giving into those feelings or going with what I know to be the only real truth; God is good and he is never going to change. This is my prayer for myself and those around me, that our faith would be based on God and who he is and nothing more.

Okay so I made dinner up tonight and Aaron approved, that means I have to write it down so we can have it again. Honestly if I don’t write down what I make, we will never have the EXACT same thing twice. I am one of those cooks who makes up the recipe as I go along. Most of my recipes don’t seem that complicated to me until I try to write them down, then they seem kinda long but I will share them anyways. Let me just say, if you don’t like coconut, you should stop reading right now (sorry mom). I am loving all things coconut right now… Coconut oil, coconut milk, coconut flakes, it is all good. So here it goes. Oh and this dinner recipe is in honor of our “cold front” coming in tomorrow. I am a cold weather, thunderstorm kinda girl. Oh and I forgot to take pictures of the finished products… Sorry, you will just have to read (next time I will, promise). P.S. all of my recipes on here will be gluten free and dairy free.

Coconut Curry Pumpkin Soup

2 Tbls. Curry paste (Mae ploy brand is the best out there) you can use red or yellow paste and we get it from H Mart in Dallas.
2 Tbls. Coconut oil
1 can light coconut milk
1 can regular coconut milk
1 1/2c. vegetable broth
1 lg. skinless boneless chicken breast (or you can use about a cup of diced already cooked chicken)
1 small green bell pepper
1c. chopped raw spinach
1/2 medium onion (diced)
1 1/2c. cubed butternut squash (you can buy it already cubed in the produce section in a bag or you can buy a whole one and cut it up yourself. You will not use a whole squash for this recipe because they are large so be prepared to have left overs)
1-2 Tbls. Italian seasoning
2-3 tsp. of salt depending on taste
2 Tbls. of sugar (optional but I think it tastes better with)
3/4 can of pumpkin
4 Tbls. curry powder

1) sauté chicken in olive oil if you aren’t using an already cooked one. Chop it up into little chunks and set aside.
2) in large pot, cook the coconut oil over medium heat and add the curry paste, letting it sauté for about a minute.
3) add both cans of coconut milk, chicken broth, pumpkin, Italian seasoning, salt, curry powder and sugar. Stir and simmer over low heat until combined.
4) brown the onions and bell pepper over high heat until soft.
5) add chicken, onions, bell peppers and butternut squash and chopped spinach to the pot.
6) let everything simmer with the lid on for around 20 min. or until the butternut squash is tender.

Well it kind of sounds complicated but it is so worth it, a very good fallish soup. Just a word of warning though, the curry paste makes it pretty spicy but still good! Now for dessert…

Fruity cobbler with a nutty topping

1 banana (diced)
4-5 strawberries
1 peach (diced)
1/2 c. Unsweetened apple sauce
2 tsp lime juice
1 Tbls. apple pie spice
1 Tbls. light coconut milk

Nut topping
1/2c. chopped almonds
1/2c. chopped walnuts
3 Tbls. unsweetened coconut flakes
1/4c. raisins
1 Tbls. butter
2 tsp. apple pie spice
1 tsp salt
1 Tbls. sugar (optional)

1) preheat oven to 375 degrees
2) put diced fruit in a microwave safe dish
3) add in apple sauce and coconut milk and put it in the microwave for 30-40 seconds to make everything softer.
4) mash up fruit with a fork, still leaving some junks. Add apple pie spice and lime juice.
5) brown chopped nuts in a skillet over low heat (careful not to burn them) with the butter. Add in apple pie spice, coconut, salt and sugar and combine and then remove from heat. Add the raisins in after removing the nuts from the heat.
6) put the fruit mixture in individual ramekins and put some of the nut topping on top.
7) bake in oven until warm and bubbly (about 5-7min but watch the nuts so they don’t burn)

* this recipe makes two full ramekins… You can either double the recipe and still make them individually or you can put the fruit mixture into a 8×8 glass Pyrex and put the nut topping on that and make it that way.

Serve hot with vanilla ice cream (rice dream, coconut ice cream etc). Yum yum good!

Will you buy it?!?

I need to get some feed back on my possible Etsy shop items… I am going to post a couple of pictures of the things I have made so far and I would love it if you would tell me if you would wear them or not. The below pictures are of hand made/ hand painted necklaces and earrings. I am also thinking about doing bangle bracelets and rings. I started off with unfinished wooden jewelry and then paint them. I will have some set inventory on Etsy but I will also take orders for custom colors and designs (if y’all think anyone will buy them, that is).

So there they are… The middle one is a bit busy and might not make it into the shop. I would appreciate feedback. Just let me know if it is something you would wear, or better yet, something you would actually buy. Okay I am signing off folks, I am tired, I have a full day tomorrow and Evelyn can always wake up sooner than I think. A few pictures at the end of the sweet moments in life.

Happenings in the Harp Home

Well as promised, I am going to start my blog and do my best to keep it updated. First of all I want to talk about our little Evelyn, why? Because I can and she is getting big way too fast. Evelyn turned nine months old on September the 6th, I cannot believe she will be a year old in December. She has changed so much over the past few months and is becoming such a little person. In the past two months she has become really good at crawling, almost has four full teeth and is pulling up/ “walking” along the furniture. Evelyn wants to be one of the “big kids” so badly but I just want her to stay my little baby girl.

Our biggest challenges with Evelyn have been her TEETH and the fact she knows she can start to get what she wants when she cries. It is hard to know when to baby them and when to let them grow up some. I lean towards the babying side because I can’t help it! Evelyn has started this new yelling/ crying noise that is much louder and more demanding then she used to be. Along with new crying noises, she has lots of tricks too… She enjoys shaking her head no, clicking her tongue, scrunching her nose, giggling and picking her own food up (not really a trick but whatever). She loves it when her daddy gets home from work and she can go play.

While Evelyn is growing up, I am still trying to get things done around the house. Aaron and I finally have an actual office area and it is AMAZING!!! We never have had a place to put art, music and office stuff but now we do. I love it because I can pull out all of my crafts and leave them out, close the door and Evelyn can’t get to them. Also, this means Evelyn gets her own room instead of an office/baby room.

Currently I am working on a painting for our bedroom (which I cannot show pictures of yet because it is not done and I don’t like it yet). I am also working on some projects for an Etsy shop, which I have wanted to do for a very long time but haven’t yet. I have once again been inspired by my sister-in-law Heather Fisk and hope that it will all work out. My idea for my shop is still coming together and I hope to have it up in the next couple of weeks (if Evelyn lets me). I will post pictures and details when I have them worked out. You can make your guess from the pictures below but it just looks like a big mess right now.

It does involve lots of paint and time! My other time is spent taking care of our dear sweet little girl, my dear sweet husband (who is having a blast with his high school and junior high classes at Ovilla Christian School) and I am also watching another cute little girl part time for a friend who actually works at Ovilla as well. Little Camilla Cordero is full of smiles and her and Evelyn will hopefully become really good friends!
Well folks, I think my blogging has come to an end for the night. Aaron has got me going to bed earlier than normal because he is now a morning person. I am too but not till about 7am. Sometimes Evelyn thinks that she should get up before then. Anyways… More blogging to come, this is fun and I think I am going to like it. Thanks to everyone for putting up with my grammar mistakes. I am not that great at writing but I do have good thoughts from time to time and I do like to let them out of my head or else it will explode. Good night to everyone and sleep well, I plan on it!

My first blog!?!

So I have wanted to start a blog for a while now and haven’t because of too many reasons. Here are a few… I am a busy mother (of only one child, it can only get more busy folks), I am doing some random art project, oh yeah, and we moved. Anyways, you get the picture, but it is time. I have been inspired lately by three of my sister-in-laws, all of them Harps. I also have felt guilty because my little Evelyn is 9 months old and I don’t feel like I document her life very well or take enough pictures of her. I also have made several new dinner meals lately and I want to remember the recipes (if I post them on the blog, hopefully I will). All that to say, I am hoping this blog will help me to remember to do things 🙂 I am also hoping that you all will get some enjoyment and amusement out of our very hectic and yet mostly still lives.
I also have been reading morning and evening devotionals by Charles Spurgeon (most days) and I will have to share some quotes and thoughts from time to time because they are too good not to. So hope you enjoy. Tomorrow you will get the low down on Evelyn, my new Etsy project, my work, recipes and whatever else I can think of.
